Chicken Soup....?
With everyone getting so deathly ill with colds and flu, please share a good recipe for old fashioned, made from scratch chicken soup. I DO NOT want links to websites for recipes you have not tried. PLEASE only recipes that you have made or actually tasted. If it was mom or grandma's recipe, all the better!

I have a couple.
Both call for a Rotisserie Chicken. Makes the whole job a lot easier and tastier.
De-bone your rotisserie chicken and set aside. Add to a large dutch oven (pot) 2 large containers of chicken stock. Whisk in on small can of tomato paste. Add cubed carrots and potatoes cut about 1/2 inch thickness. Let this simmer for about 20 minutes and add the chicken. Salt and pepper to taste and add hot sauce to taste.
De-bone your chicken and set aside. Add to a large dutch oven (pot) 2 large containers of chicken stock. Add one can of creamy chicken and herb soup (Campbell's) Whisk to blend. Add egg noodles and simmer until done adding water to keep the soup consistency as the noodles cook. They will absorb some of the liquid. Add chicken pieces, salt and pepper to taste and sprinkle with parsely.

Get a whole chicken and let it simmer for about 1-2 hours with carrots, onions and cabbage. Then removed the chicken (leave the stock) take the meat off and add it to the stock and simmer for another 15 mins, add salt and pepper to taste.

Here is my version of Chicken Soup.
2 carrots chopped
2 ribs of celery chopped
1 medium onion chopped
1 clove of garlic minced
1 bay leaf
1 tablespoon of fresh chopped thyme
4 cups of chicken stock
1/2 cup raw egg noodle pasta
1 cups of cooked shredded chicken
salt and pepper to taste
Combine all ingredients except the chicken and pasta. Bring to a boil reduce heat and simmer for 20 minutes or until all veggies are tender. Remove bay leaf, add chicken and pasta simmer for 10 more minute or until pasta is tender.
I like to buy Rotisserie chicken because it make it easier.

The key to any good soup is the stock. Cook a whole chicken in water, a pinch of salt, celery, a couple of bay leaves, and some black pepper for an hour (do not overcook as this will make your chicken stringy). Remove the chicken and debone. Return to pot and add carrots and onion (if desired). Simmer for 30 minutes. Add a bag of egg noodles and cook 15 minutes.
