How long can you have the cold\flu virus without being sick?
Sometimes we may have the virus lying dormant in our bodies but not enough so that we fall sick with the symptoms and then you have a couple of late nights or whatever and BANG, you're sick.

How long can these viruses lay dormant in our body without dying, during this time that we don't show the symptoms of the flu or cold?

Cold & flu viruses don't lay dormant. There's the initial infection, the incubation period followed by the symptoms. Sorry but your thinking is incorrect.

As the person above stated,the viruses don't lay dormant, they enter your cells and begin replicating by hijacking the host cell into making it's virus particles.
The incubation period(time between virus enters and when you first show symptoms) varies with each person,and the type of virus. Adenoviruses,coronaviruses,and rhinoviruses typically cause the "common cold" and there are millions of strains and species of each, and flu viruses(Orthomyxoviruses) cause the flu,and they are infamous for mutating.
The whole "bang" of a illness hitting you is actually your immune systems reaction to having realized there is an infection and going into "battle mode"
Some viruses ,like flu, can use special techniques that delay or trick your immune system and give them a jump start to replicating in your cells without the body knowing yet-which is why you can be contagious a day or two before you even "get sick"-the viruses are replicating,releasing,and spreading-with colds and flu every breath you exhale releases thousands of viruses into the air,and this is happening even when you feel fine(if infected),once your body catches on to what's going on then you start to feel like crap. Fever,body aches,congestion are all your body reacting to and trying to get rid of the pathogen.
